Chicken Meatballs in Tomato Sauce

Ingredients
Tomato Sauce:
- 1 Tablespoon olive oil
- 1/2 cup onion diced
- 1 Tablespoon garlic minced
- 1 (28 ounce) can Hunt’s Basil Garlic Crushed Tomatoes
- 1 (8 ounce) can Hunt’s Tomato Sauce with Basil Garlic and Oregano
- 1 teaspoon salt
- 1/2 teaspoon pepper
Meatballs:
- 1 1/2 pounds ground chicken
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 cup fresh parsley chopped
- 1 Tablespoon Italian seasoning
- 1/3 cup finely grated parmesan cheese
- 1/3 cup Italian style bread crumbs
Instructions
- Heat oil in a large skillet over medium-high heat. Add onion and cook for 2-3 minutes, or until tender. Add garlic and sauté for 1 additional minute.
- Add crushed tomatoes, tomato sauce, salt and pepper to the skillet. Stir until combined, cover and let simmer for 10 minutes.
- While sauce is simmering, combine all meatball ingredients in a large bowl until fully incorporated. Form mixture into 30 1-inch meatballs (approximately 0.9 ounces) each. Gently place meatballs in the tomato sauce and simmer, uncovered, over low heat for 15 minutes.
- Turn meatballs over using a spoon or tongs and let simmer an additional 10 minutes or until cooked through. Serve over pasta, on a bun, etc. as desired (log separately).
