Marinated Italian Chicken

Ingredients

  • 2 pounds boneless skinless chicken breast
  • 1/3 cup olive oil
  • 1/4 cup white wine vinegar
  • 1 Tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  • Pound chicken to a half inch in thickness then place in a gallon-sized resealable bag.
  • In a small bowl, whisk together all remaining ingredients then pour over chicken, seal bag and let marinate in the refrigerator for at least 4 hours, preferably overnight.
  • Preheat grill to medium heat. Remove chicken from the bag, discarding marinade, and grill for 5-7 minutes on each side or until it reaches an internal temperature of 165 degrees F.

    Made this chicken on the stovetop and it was delicious. Easy to make and not dry at all. We had it alongside the Mediterranean Pasta Salad to add some protein, really great combo.
