Creamy Chicken Gnocchi Soup

  • 1 Tablespoon olive oil
  • 1 cup celery diced
  • 1/2 cup yellow onion diced
  • 1 Tablespoon garlic minced
  • 1/2 cup shredded carrots
  • 1 pound cooked chicken diced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon thyme
  • 16 ounces potato gnocchi
  • 2 cups low-fat 1% milk
  • 1/2 cup nonfat plain Greek yogurt
  • 1 cup fresh baby spinach


  • Heat oil in a large pot over medium heat. Add celery, onion, garlic and carrots and sauté for 2-3 minutes or until onions are tender.
  • Add chicken, chicken broth, salt, pepper and thyme and mix until combined then bring to a boil. Once boiling, stir in gnocchi and boil for 3-4 minutes. Reduce heat to low and let simmer for 10 minutes.
  • Stir in milk, yogurt and spinach and cook another 2- 3 minutes or until spinach is wilted.

    DELICIOUS! I made this for my husband and he loved it so much he got seconds. One serving was very filling too.

    Recipe is delicious but for precise macros wish it has everything in grams vs cups. Like how many grams of carrots? Also is it a pound of chicken before cooking or a pound after? How many grams of Greek yogurt?

    It was nice creamy chicken soup. I would suggest serving it immediately. I left on low for hour waiting dinner and she was thicc at dinner time. Tasted delicious, but I prefer a more soupy texture.
