Wonton Chicken Salad

Ingredients

Dressing:

  • 2 Tablespoons sesame oil
  • 4 Tablespoons rice vinegar
  • 1 teaspoon low-sodium soy sauce
  • 1 Tablespoon honey
  • 1 Tablespoon sugar
  • 1 teaspoon ginger paste
  • 1 teaspoon salt
  • 1 teaspoon sesame seeds

Salad:

  • 1 pound cooked chicken diced
  • 8 ounces green cabbage thinly sliced
  • 4 ounces red cabbage thinly sliced
  • 6 ounces romaine lettuce chopped
  • 4 ounces red bell pepper thinly sliced
  • 4 ounces matchstick carrots
  • 4 ounces sugar snap peas diced
  • 8 ounces English cucumber peeled and diced
  • 1 ounce green onion diced
  • 1 ounce fresh cilantro chopped
  • 3/4 cup (42 grams) wonton strips

Instructions

  • In a small bowl, whisk together dressing ingredients and set aside.
  • In a large mixing bowl, toss together all salad ingredients.
  • Pour dressing over salad and toss to coat. If preparing ahead of time, wait to add wonton strips and dressing until right before serving.
