Wonton Chicken Salad

Ingredients
Dressing:
- 2 Tablespoons sesame oil
- 4 Tablespoons rice vinegar
- 1 teaspoon low-sodium soy sauce
- 1 Tablespoon honey
- 1 Tablespoon sugar
- 1 teaspoon ginger paste
- 1 teaspoon salt
- 1 teaspoon sesame seeds
Salad:
- 1 pound cooked chicken diced
- 8 ounces green cabbage thinly sliced
- 4 ounces red cabbage thinly sliced
- 6 ounces romaine lettuce chopped
- 4 ounces red bell pepper thinly sliced
- 4 ounces matchstick carrots
- 4 ounces sugar snap peas diced
- 8 ounces English cucumber peeled and diced
- 1 ounce green onion diced
- 1 ounce fresh cilantro chopped
- 3/4 cup (42 grams) wonton strips
Instructions
- In a small bowl, whisk together dressing ingredients and set aside.
- In a large mixing bowl, toss together all salad ingredients.
- Pour dressing over salad and toss to coat. If preparing ahead of time, wait to add wonton strips and dressing until right before serving.
