Roasted Maple Butternut Squash

Ingredients
- 2 pounds butternut squash peeled and cubed
- 2 Tablespoons olive oil
- 2 Tablespoons pure maple syrup
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon cinnamon
Instructions
- Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper or spray generously with nonstick cooking spray; set aside.
- Place squash in a gallon-sized resealable bag or large mixing bowl. Drizzle olive oil and maple syrup on top and toss to coat.
- Spread squash in an even layer on prepared pan and season with salt, pepper and cinnamon.
- Bake for 15 minutes, remove from oven and gently stir, then cook an additional 15 minutes or until tender.
