Ingredients
- 2 cups mashed banana
- 2 eggs beaten
- 1 cup erythritol sweetener or other granulated zero calorie sweetener
- 1/2 cup unsweetened applesauce
- 2 cups all-purpose flour
- 100 grams vanilla whey protein powder
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 1/8 teaspoon nutmeg
Instructions
- Preheat oven to 350 degrees F. Spray a 9×5-inch loaf pan with nonstick cooking spray and set aside.
- In a large mixing bowl, combine mashed banana, eggs, sweetener and applesauce.
- Add flour, protein powder, baking powder, salt, cinnamon and nutmeg and stir until combined.
- Pour batter into prepared loaf pan and bake for 55-60 minutes or until golden brown.
- Cut into slices and serve.
