Protein Banana Bread

Ingredients

  • 2 cups mashed banana
  • 2 eggs beaten
  • 1 cup erythritol sweetener or other granulated zero calorie sweetener
  • 1/2 cup unsweetened applesauce
  • 2 cups all-purpose flour
  • 100 grams vanilla whey protein powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg

Instructions

  • Preheat oven to 350 degrees F. Spray a 9×5-inch loaf pan with nonstick cooking spray and set aside.
  • In a large mixing bowl, combine mashed banana, eggs, sweetener and applesauce.
  • Add flour, protein powder, baking powder, salt, cinnamon and nutmeg and stir until combined.
  • Pour batter into prepared loaf pan and bake for 55-60 minutes or until golden brown.
  • Cut into slices and serve.
