Protein Lemon Ricotta Pancakes

Ingredients

Pancakes:

  • 2 cups Kodiak Cakes Buttermilk Power Cakes Mix
  • 2 (25 gram) scoops whey vanilla protein powder
  • 1 Tablespoon Truvia Cane Sugar Blend
  • 1 cup low-fat 1% milk
  • 3 eggs
  • 1/2 cup part-skim ricotta cheese
  • 1/4 cup lemon juice
  • 1 Tablespoon lemon zest

Glaze:

  • Zest of 2 lemons
  • Juice of 2 lemons
  • 1 1/4 cup Swerve Confectioners Sweetener
  • 1/2 cup low-fat 1% milk

Instructions

Pancakes:

  • Preheat a grilled or skillet to medium heat and spray with nonstick cooking spray.
  • Whisk together all ingredients in a large mixing bowl.
  • Pour batter 1/4 cup at a time onto griddle or skillet and cook until bubbles appear in the center of the pancake, then flip and cook until both sides are golden brown.

Glaze:

  • Whisk together all glaze ingredients and serve over pancakes, if desired.

    The taste of these pancakes with the glaze is delicious! They are very filling and dense pancakes as well. I halved the recipe and it still made a ton!
