Protein Carrot Cake

Ingredients
- Cake:
- 50 grams vanilla protein powder
- 3/4 cup all-purpose flour
- 1/2 cup Swerve Granulated or other zero calorie granulated sweetener
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- 1/2 cup unsweetened applesauce
- 1/2 cup nonfat plain Greek yogurt
- 1 egg
- Frosting:
- 4 ounces Neufchâtel cheese softened
- 25 grams vanilla protein powder
- 1 teaspoon vanilla extract
- 1/2 cup Cool Whip Lite
Instructions
- Preheat oven to 350 degrees F. Spray an 8×8-inch baking dish with nonstick cooking spray; set aside.
- In a large mixing bowl, combine protein powder, flour, sweetener, baking soda, salt, ginger and cinnamon.
- Add vanilla extract, grated carrots, applesauce, yogurt and egg.
- Spread batter in prepared pan and bake for 25-30 minutes, or until set in the center. Remove from oven and let cool.
- In a mixing bowl, beat together frosting ingredients until light and fluffy. Spread on top of cooled cake. Cut into slices and serve. Garnish with chopped walnuts, if desired (log separately).
