- 1 pound roma tomatoes diced
- 1 (14.5 ounce) can petite diced tomatoes
- 1/2 cup onion diced
- 1 jalapeno pepper seeded and diced
- 1/3 cup fresh cilantro chopped
- 1 teaspoon garlic minced
- 2 Tablespoons lime juice
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/2 teaspoon sugar
- Salt and pepper to taste
- Combine all ingredients in a blender or food processor until you reach desired consistency.
- Store in an airtight container in the refrigerator for up to 1 week.
