Baked Sweet and Sour Chicken

Ingredients
Chicken:
- 1/2 cup vegetable oil
- 1 1/2 pounds boneless skinless chicken breast
- Salt and pepper to taste
- 1 cup Kodiak Cakes Buttermilk Power Cakes
- 2 eggs
- 1 egg white
Sauce:
- 1 cup Truvia Cane Sugar Blend
- 1/2 cup ketchup
- 1/2 cup white vinegar
- 1/2 cup apple cider vinegar
- 2 Tablespoons low-sodium soy sauce
- 2 teaspoons garlic salt
Instructions
- Preheat oven to 325 degrees F. Heat oil in a large pot over medium-high heat. Cut chicken breasts into bite-sized pieces and season with salt and pepper.
- Place Kodiak Cakes mix into a bowl and whisk egg and egg white together in another bowl. Dip chicken pieces into Kodiak Cakes then coat in egg mixture.
- Place a few coated chicken pieces at a time in hot oil and cook for a few minutes, turning occasionally, until golden brown on the outside. Remove chicken from oil and place on a plate lined with paper towel to absorb excess oil.
- Place chicken in a 9×13-inch baking pan sprayed with nonstick cooking spray. Whisk all sauce ingredients together then pour over chicken. Bake for 50-55 minutes, or until sauce has thickened and chicken is completely cooked through.
