Baked Sweet and Sour Chicken

  • 1/2 cup vegetable oil
  • 1 1/2 pounds boneless skinless chicken breast
  • Salt and pepper to taste
  • 1 cup Kodiak Cakes Buttermilk Power Cakes
  • 2 eggs
  • 1 egg white


  • 1 cup Truvia Cane Sugar Blend
  • 1/2 cup ketchup
  • 1/2 cup white vinegar
  • 1/2 cup apple cider vinegar
  • 2 Tablespoons low-sodium soy sauce
  • 2 teaspoons garlic salt


  • Preheat oven to 325 degrees F. Heat oil in a large pot over medium-high heat. Cut chicken breasts into bite-sized pieces and season with salt and pepper.
  • Place Kodiak Cakes mix into a bowl and whisk egg and egg white together in another bowl. Dip chicken pieces into Kodiak Cakes then coat in egg mixture.
  • Place a few coated chicken pieces at a time in hot oil and cook for a few minutes, turning occasionally, until golden brown on the outside. Remove chicken from oil and place on a plate lined with paper towel to absorb excess oil.
  • Place chicken in a 9×13-inch baking pan sprayed with nonstick cooking spray. Whisk all sauce ingredients together then pour over chicken. Bake for 50-55 minutes, or until sauce has thickened and chicken is completely cooked through.
