Garden Corn Salad

Ingredients

Salad:

  • 3 cups frozen corn defrosted and drained
  • 1/2 cup roma tomato diced
  • 3/4 cup green onion diced
  • 1 cup English cucumber diced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup cilantro chopped

Dressing:

  • 2 Tablespoons olive oil
  • 2 Tablespoons red wine vinegar
  • 1 teaspoon garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • In a large mixing bowl, combine all salad ingredients.
  • In a small bowl, whisk together all dressing ingredients. Pour dressing over salad and stir to coat evenly. Refrigerate before serving.
