Parmesan Herb Roasted Sweet Potates

Ingredients
- 2 pounds sweet potatoes peeled and cubed
- 2 Tablespoons olive oil
- 1 Tablespoon garlic minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 Tablespoon fresh parsley chopped
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat oven to 400 degrees F. Spray a large baking sheet with nonstick cooking spray; set aside.
- Spread cut sweet potatoes in an even layer on prepared pan.
- In a small bowl, mix together olive oil, garlic, salt and pepper until combined then pour over sweet potatoes and toss to coat.
- Bake for 30 minutes, stirring or flipping halfway through.
- Remove from oven and top with fresh parsley and grated parmesan and return to the oven and cook on high broil for 1-2 more minutes to melt cheese.
