Copycat Vessel Kitchen Mountain Bowl

Ingredients

Caramelized Chuck Roast:

  • 2 teaspoons salt
  • 1 teaspoon paprika
  • 1 teaspoon pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 2 1/2 pounds boneless chuck roast

Sweet Potatoes:

  • 2 pounds sweet potatoes peeled and diced
  • 2 Tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Chimichurri Sauce:

  • 1/2 cup freshly chopped cilantro
  • 1/2 cup freshly chopped parsley
  • 1/2 cup diced yellow onion
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 Tablespoon minced garlic
  • 1/2 teaspoon Italian seasoning
  • 2 Tablespoons red wine vinegar

Other ingredients:

  • 8 ounces pickled red onions I used Mezzetta Pickled Red Onions
  • 8 Tablespoons fat – free feta cheese crumbles
  • 12 eggs scrambled and cooked

Instructions

  • For Caramelized Chuck Roast: Preheat oven 325 degrees F. In a small bowl, combine salt, paprika, pepper, onion powder, garlic powder and oregano. Rub seasoning on the outside of the roast and place in a baking dish. Cover with foil, place in the oven and cook for 3 hours. Remove from the oven and shred the roast and mix meat back into rendered fat and juices in the pan. Raise the oven temperature to 425 degrees F. Place roast back in the oven and cook for an additional 10 minutes.
  • For Sweet Potatoes: Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper. Toss sweet potatoes in olive oil, salt and pepper. Spread in an even layer on prepared pan and bake for 25 – 30 minutes.
  • Combine all chimichurri ingredients in a blender or food processor until smooth, set aside.
  • Place 58 grams cooked sweet potatoes, 2.6 ounces chuck roast, 65 grams egg, 1 Tablespoon feta cheese, 1 ounce pickled onion and 18 grams chimichurri in each container. Store in the refrigerator in an airtight container for up to 5 days.
