Ginger Cookies

Ingredients
- 3/4 cup unsweetened applesauce
- 3/4 cup Truvia Cane Sugar Blend divided
- 1 egg
- 1/4 cup molasses
- 2 (25 gram) scoops vanilla protein powder
- 3 cups Kodiak Cakes Buttermilk Power Cakes Mix
- 2 teaspoons ground ginger
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350 degrees F.
- In a large mixing bowl or stand mixer, combine applesauce, 1/2 cup Truvia, egg, and molasses.
- Add protein powder, Kodiak Cakes, ginger, cinnamon, cloves and salt; mix until combined.
- Shape dough into 1-inch balls, roll in remaining 1/4 cup Truvia and place two inches apart on a baking sheet sprayed with nonstick cooking spray.
- Bake for 12-14 minutes, or until set and lightly golden brown on the edges.
