Heat oil in a large skillet over medium high heat. Add chicken and season with poultry seasoning, salt and pepper.
Cook, breaking up chicken, until cooked through then stir in bell pepper, onion and garlic. Cook for 5-6 minutes or until vegetables are tender.
In a small mixing bowl, whisk together tomato sauce, maple syrup, soy sauce, apple cider vinegar, brown sugar and dijon mustard. Pour into skillet and let simmer, stirring occasionally, for 5 minutes or until heated through.
Serve on buns or as desired.
