BBQ Chicken Sloppy Joes

Ingredients

  • 1 Tablespoon olive oil
  • 2 pounds lean ground chicken
  • 1 Tablespoon poultry seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 ounces red bell pepper diced
  • 4 ounces red onion diced
  • 1 Tablespoon garlic minced
  • 8 ounces tomato sauce
  • 1/4 cup pure maple syrup
  • 3 Tablespoons low-sodium soy sauce
  • 2 Tablespoons apple cider vinegar
  • 2 Tablespoons brown sugar
  • 1 Tablespoon dijon mustard

Instructions

  • Heat oil in a large skillet over medium high heat. Add chicken and season with poultry seasoning, salt and pepper.
  • Cook, breaking up chicken, until cooked through then stir in bell pepper, onion and garlic. Cook for 5-6 minutes or until vegetables are tender.
  • In a small mixing bowl, whisk together tomato sauce, maple syrup, soy sauce, apple cider vinegar, brown sugar and dijon mustard. Pour into skillet and let simmer, stirring occasionally, for 5 minutes or until heated through.
  • Serve on buns or as desired.
