BBQ Chicken Sloppy Joes

Ingredients
- 1 Tablespoon olive oil
- 2 pounds lean ground chicken
- 1 Tablespoon poultry seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 ounces red bell pepper diced
- 4 ounces red onion diced
- 1 Tablespoon garlic minced
- 8 ounces tomato sauce
- 1/4 cup pure maple syrup
- 3 Tablespoons low-sodium soy sauce
- 2 Tablespoons apple cider vinegar
- 2 Tablespoons brown sugar
- 1 Tablespoon dijon mustard
Instructions
- Heat oil in a large skillet over medium high heat. Add chicken and season with poultry seasoning, salt and pepper.
- Cook, breaking up chicken, until cooked through then stir in bell pepper, onion and garlic. Cook for 5-6 minutes or until vegetables are tender.
- In a small mixing bowl, whisk together tomato sauce, maple syrup, soy sauce, apple cider vinegar, brown sugar and dijon mustard. Pour into skillet and let simmer, stirring occasionally, for 5 minutes or until heated through.
- Serve on buns or as desired.
