Preheat oven to 425 degrees F. Spray a large baking sheet (or two half sheets) with nonstick cooking spray; set aside.
Peel and slice sweet potatoes into long, thin strips, about 1⁄4-inch wide. Place cut sweet potatoes in a resealable gallon-sized bag and pour olive oil on top. Seal bag and shake until potatoes are evenly coated.
Add remaining ingredients to the bag, seal and shake to evenly coat fries. Spread fries in an even layer on prepared baking pan(s), being sure not to overlap fries.
Bake for 35 minutes then turn oven to high broil and cook for an additional 1-2 minutes, or until fries are crisp and golden brown.
