Cook pasta according to package directions; drain and set aside.
In a small bowl, whisk together sauce ingredients and set aside.
Heat sesame oil in a large skillet over medium-high heat. Add garlic, mushrooms, red bell pepper, carrot and snow peas and sauté until tender, about 3-4 minutes. Add spinach and cook for 1-2 minutes or until wilted.
Add cooked noodles and sauce and toss to combine. Garnish with sesame seeds and serve.
