Instructions
Preheat oven to 325 degrees F. Heat oil in a large pot over medium-high heat. Cut chicken breasts into bite-sized pieces and season with salt and pepper.
Place Kodiak Cakes mix into a bowl and whisk egg and egg white together in another bowl. Dip chicken pieces into Kodiak Cakes then coat in egg mixture.
Place a few coated chicken pieces at a time in hot oil and cook for a few minutes, turning occasionally, until golden brown on the outside. Remove chicken from oil and place on a plate lined with paper towel to absorb excess oil.
Place chicken in a 9x13-inch baking pan sprayed with nonstick cooking spray. Whisk all sauce ingredients together then pour over chicken. Bake for 50-55 minutes, or until sauce has thickened and chicken is completely cooked through.
