Protein Carrot Cake

Ingredients

Cake:

  • 50 grams vanilla protein powder
  • 3/4 cup all-purpose flour
  • 1/2 cup Swerve Granulated or other zero calorie granulated sweetener
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup unsweetened applesauce
  • 1/2 cup nonfat plain Greek yogurt
  • 1 egg

Frosting:

  • 4 ounces Neufchâtel cheese softened
  • 25 grams vanilla protein powder
  • 1 teaspoon vanilla extract
  • 1/2 cup Cool Whip Lite

Instructions

  • Preheat oven to 350 degrees F. Spray an 8x8-inch baking dish with nonstick cooking spray; set aside.
  • In a large mixing bowl, combine protein powder, flour, sweetener, baking soda, salt, ginger and cinnamon.
  • Add vanilla extract, grated carrots, applesauce, yogurt and egg.
  • Spread batter in prepared pan and bake for 25-30 minutes, or until set in the center. Remove from oven and let cool.
  • In a mixing bowl, beat together frosting ingredients until light and fluffy. Spread on top of cooled cake. Cut into slices and serve. Garnish with chopped walnuts, if desired (log separately).
