Slow Cooker Sticky Asian Ribs

Ingredients

  • 2 pounds boneless pork country ribs

Rub:

  • 2 Tablespoons brown sugar
  • 1 Tablespoon smoked paprika
  • 2 teaspoons chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons salt
  • 1/2 teaspoon pepper

Sauce:

  • 2 teaspoons ground ginger
  • 1 teaspoon pepper
  • 1 teaspoon onion powder
  • 1 Tablespoon garlic minced
  • 2 Tablespoons sweet chili sauce
  • 2/3 cup low-sodium soy sauce
  • 2/3 cup balsamic vinegar
  • 2/3 cup honey
  • 1 Tablespoon cornstarch
  • 1 Tablespoon water

Instructions

  • Spray slow cooker with nonstick cooking spray. Place ribs in a gallon-sized resealable bag; set aside.
  • In a small bowl, combine all rub ingredients then pour over ribs, seal bag and shake until meat is completely coated. Place coated ribs in slow cooker.
  • In a separate bowl, whisk together ginger, pepper, onion powder, garlic, chili sauce, soy sauce, balsamic and honey then pour over ribs. Cover and cook on low for 6-8 hours.
  • After cooking, remove ribs from the slow cooker and place on a baking sheet lined with parchment paper and preheat oven to high broil.
  • Pour sauce from the slow cooker into a saucepan over medium-high heat. In a small bowl, whisk together cornstarch and water to make a slurry then whisk into the saucepan. Bring to a boil, stirring continuously, until thickened.
  • Brush sauce over the ribs until coated and broil for 1-2 minutes. Serve with ribs with extra sauce on the side for dipping.

1 serving  - 3.9 ounces ribs + 2 ounces sauce
