Preheat olive oil in a skillet over medium-high heat. Add pork chops to skillet, season with salt and pepper and sear each side until golden brown. Place seared pork chops in a slow cooker sprayed with nonstick cooking spray.
In a small bowl, mix together garlic, ketchup, soy sauce and honey until well combined then pour over pork chops. Cover and cook on low for 4 hours.
After cooking, remove pork chops from slow cooker and set aside on a plate. Pour sauce from the slow cooker into a saucepan over medium-high heat.
In a small bowl, whisk together cornstarch and water to form a slurry, then whisk into sauce. Cook, stirring continuously, for 1-2 minutes or until thickened. Pour sauce over pork chops before serving.
