Slow Cooker Texas Chili

Ingredients

  • 2 pounds lean beef stew meat
  • 1 cup diced yellow onion
  • 1/2 cup diced red bell pepper
  • 1 cup diced celery
  • 1 cup diced carrots
  • 2 Tablespoons Worcestershire sauce
  • 1 cup low-sodium beef broth
  • 1 (14.5 ounce) can fire roasted diced tomatoes
  • 1 (7 ounce) can diced green chilies
  • 2 Tablespoons tomato paste
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt

Instructions

  • Heat a large nonstick skillet over high heat. Place beef in the skillet and sear on all sides (about a minute on each side) then place in a slow cooker sprayed with nonstick cooking spray.
  • Add all remaining ingredients to the slow cooker and stir to combine. Cover and cook on low for 8-10 hours.
  • Stir and serve with desired toppings (log separately).
