Protein Texas Sheet Cake

Ingredients

Cake:

  • 50 grams chocolate protein powder
  • 1 1/2 cups all-purpose flour
  • 1 (12 ounce) pkg. Swerve Granulated or other zero calorie sweetener
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup nonfat plain Greek yogurt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup water
  • 1 cup I Can’t Believe It’s Not Butter Light
  • 3 Tablespoons unsweetened cocoa powder

Frosting:

  • 1/2 cup I Can’t Believe It’s Not Butter Light
  • 2 Tablespoons unsweetened cocoa powder
  • 25 grams chocolate protein powder
  • 1/4 cup low-fat 1% milk
  • 3 cups powdered sugar

Instructions

  • Preheat oven to 350 degrees F. Spray a half baking sheet (18”x13”) with nonstick cooking spray; set aside.
  • In a large mixing bowl, combine protein powder, flour, sweetener, baking soda and salt. Add yogurt, eggs and vanilla extract then mix until combined; set aside.
  • Add water, light butter and cocoa powder to a saucepan over medium heat. Bring mixture to a boil, stirring occasionally.
  • Once chocolate mixture is boiling, remove from heat and stir into bowl with batter and mix until smooth. Spread batter in an even layer in prepared pan and bake for 15-20 minutes or until center is set.
  • Meanwhile, make the frosting by combining light butter, cocoa powder, protein powder and milk in a saucepan over medium heat, whisking continuously, and bring to a boil. Remove from heat and whisk in powdered sugar until smooth. Immediately pour over warm cake and spread in an even layer. Let frosting set for 5-10 minutes before serving.
