Garden Corn Salad

Salad:
- 3 cups frozen corn defrosted and drained
- 1/2 cup roma tomato diced
- 3/4 cup green onion diced
- 1 cup English cucumber diced
- 1/4 cup crumbled feta cheese
- 1/4 cup cilantro chopped
Dressing:
- 2 Tablespoons olive oil
- 2 Tablespoons red wine vinegar
- 1 teaspoon garlic minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
In a large mixing bowl, combine all salad ingredients.
In a small bowl, whisk together all dressing ingredients. Pour dressing over salad and stir to coat evenly. Refrigerate before serving.
