Lemon Protein Cookies

Ingredients

  • 1 1/4 cups unsweetened applesauce
  • 1 cup Swerve Granulated or zero calorie granulated sweetener
  • 1 teaspoon lemon extract
  • 1 egg
  • 1/4 cup lemon juice
  • 1 (20 ounce) pkg. Kodiak Cakes Buttermilk Power Cakes Mix
  • 1 (1 ounce) pkg. Jello Sugar-Free Lemon Instant Pudding Mix
  • 75 grams vanilla protein powder
  • 1/2 cup Nestle White Chocolate Chips

Instructions

  • Preheat oven to 375 degrees F. Line a baking sheet with parchment paper or spray with nonstick cooking spray.
  • In a large mixing bowl or stand mixer, combine applesauce, sweetener, lemon extract, egg and lemon juice.
  • Add Kodiak Cakes, pudding mix and protein powder; mix until fully incorporated. Fold in chocolate chips.
  • Drop heaping Tablespoons of dough, two inches apart, onto prepared baking sheet using a cookie scoop (approx. 1.4 ounces each). Bake for 8-10 minutes, or until set.
