Heat oil in a pot over medium-high heat. Add onion and sauté for 3-5 minutes, or until tender. Add garlic and cook for an additional minute.
Add remaining ingredients to the pot and stir to combine. Bring to a boil then cover, reduce heat to low and simmer for 20-25 minutes, or until liquid is absorbed.
Fluff with a fork and let sit for a few minutes before serving.
