Spanish Quinoa

Ingredients

  • 1 Tablespoon olive oil
  • 1/2 cup white onion diced
  • 1 teaspoon garlic minced
  • 2 cups uncooked quinoa
  • 1 (8 ounce) can tomato sauce
  • 4 cups vegetable broth
  • 1 teaspoon salt
  • 1/4 teaspoon cumin

Instructions

  • Heat oil in a pot over medium-high heat. Add onion and sauté for 3-5 minutes, or until tender. Add garlic and cook for an additional minute.
  • Add remaining ingredients to the pot and stir to combine. Bring to a boil then cover, reduce heat to low and simmer for 20-25 minutes, or until liquid is absorbed.
  • Fluff with a fork and let sit for a few minutes before serving.
