Copycat Sweet Fire Chicken

Ingredients

  • 1 1/2 pounds boneless skinless chicken breast
  • 2 eggs
  • 1 cup Kodiak Cakes Buttermilk Power Cakes Mix
  • 2 teaspoons garlic powder
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1 pound fresh pineapple cut into bite- sized pieces
  • 8 ounces red bell pepper cut into bite- sized pieces
  • 6 ounces white onion cut into bite-sized pieces
  • 1 cup Thai sweet chili sauce
  • 2 Tablespoons green onion diced
  • 1/2 teaspoon sesame seeds

Instructions

  • Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper; set aside.
  • Cut chicken into bite-sized pieces; set aside. Whisk eggs together in a small bowl. In a separate bowl, combine Kodiak Cakes, garlic powder, salt and pepper.
  • Dip each piece of chicken in egg then coat in Kodiak Cakes mixture and place on prepared baking sheet. Spread pineapple, bell pepper and onion in the pan with the chicken and spray cooking spray generously over the top.
  • Bake for 25 minutes, turning and spraying with cooking spray halfway through.
  • Remove from oven, pour chili sauce on top and toss to combine. Return to oven and broil on high for 1-2 minutes. Garnish with green onion and sesame seeds before serving.
