Preheat oven to 425 degrees F. Line a large baking sheet with parchment paper. Spread fries on the prepared pan in an even layer and bake according to package directions.
While the fries cook, heat olive oil in a large skillet over medium-high heat. In a small bowl, combine chili powder, cumin, coriander, salt, onion powder and pepper then rub on the outside of the steak.
Cook steak for 2-3 minutes on each side in the skillet (or until you reach desired doneness), then remove from heat and cut into 1/2-inch cubes; cover with foil to keep warm and set aside.
Remove fries from the oven, top with cheese and bake for an additional 5 minutes or until cheese is melted.
In a small bowl, combine all pico Ingredients ; set aside.
Divide fries evenly between 6 plates (4.4 ounces each) and top with (4.1 ounces) steak, 1 Tablespoon sour cream, (1.8 ounces) pico and 2 teaspoons cilantro.
