Protein Caramel Popcorn

Ingredients

  • 1 cup un-popped popcorn kernels
  • 1/2 cup butter
  • 3/4 cup Truvia Cane Sugar Blend
  • 1/4 cup dark brown sugar
  • 4 (25 gram) scoops vanilla protein powder
  • 1/2 cup honey
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda

Instructions

  • Air pop popcorn, remove un-popped kernels and place in a large bowl.
  • In a saucepan over medium-high heat, combine butter, Truvia, brown sugar, protein powder, honey, and water.
  • Whisk continuously and bring to a boil, let boil for one minute then remove from heat.
  • Stir in vanilla extract, salt, and baking soda and mix until combined.
  • Pour caramel mixture over popcorn and gently stir until popcorn is evenly coated.
  • Let cool completely before serving.
