Apple Cider Coleslaw

Ingredients

Coleslaw:

  • 8 ounces green cabbage chopped
  • 8 ounces red cabbage chopped
  • 4 ounces shredded carrots
  • 1 ounce green onion diced

Dressing:

  • 1/4 cup apple cider vinegar
  • 2 Tablespoons olive oil
  • 1 Tablespoon dijon mustard
  • 2 Tablespoons honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  • In a large mixing bowl, combine cabbage, carrots and onion.
  • In a small bowl, whisk together dressing ingredients then pour on top of cabbage mixture and stir to combine.
