Apple Cider Coleslaw

Coleslaw:
- 8 ounces green cabbage chopped
- 8 ounces red cabbage chopped
- 4 ounces shredded carrots
- 1 ounce green onion diced
Dressing:
- 1/4 cup apple cider vinegar
- 2 Tablespoons olive oil
- 1 Tablespoon dijon mustard
- 2 Tablespoons honey
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
In a large mixing bowl, combine cabbage, carrots and onion.
In a small bowl, whisk together dressing ingredients then pour on top of cabbage mixture and stir to combine.
