Roasted Maple Butternut Squash

- 2 pounds butternut squash peeled and cubed
- 2 Tablespoons olive oil
- 2 Tablespoons pure maple syrup
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon cinnamon
Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper or spray generously with nonstick cooking spray; set aside.
Place squash in a gallon-sized resealable bag or large mixing bowl. Drizzle olive oil and maple syrup on top and toss to coat.
Spread squash in an even layer on prepared pan and season with salt, pepper and cinnamon.
Bake for 15 minutes, remove from oven and gently stir, then cook an additional 15 minutes or until tender.
