Spray slow cooker with nonstick cooking spray and place onion slices in the bottom.
Heat oil in a large skillet over medium high heat. Add pork loin to the skillet and sear until browned on all sides (about 2-3 minutes on each side) then place in slow cooker.
In a small bowl, whisk together salt, pepper, paprika, mustard, garlic, apple cider, apple cider vinegar and brown sugar. Pour mixture on top of pork, cover and cook on low for 6-8 hours, or until pork is cooked and easy falls apart with a fork.
Remove pork from slow cooker and place in a large mixing bowl. Shred the pork using two forks and add juice and onions from the slow cooker as desired. Serve on buns with MFF Apple Cider Coleslaw, if desired (log bun and slaw separately).
