Cowboy Caviar

- 1 (15.5 ounce) can garbanzo beans drained and rinsed
- 1 (15.25 ounce) can black beans drained and rinsed
- 1 (15.25 ounce) can corn drained
- 8 ounces orange or red bell pepper diced
- 1 ounce jalapeno pepper finely diced
- 4 ounces red onion finely diced
- 4 ounces avocado diced
- 1/4 cup fresh cilantro chopped
- 2 Tablespoons lime juice
- 3 Tablespoons apple cider vinegar
- 1 Tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Mix all ingredients in a large mixing bowl until well combined.
Cover and refrigerate before serving.
If making ahead of time, don’t add avocado until right before serving.
