Parmesan Herb Roasted Sweet Potates

- 2 pounds sweet potatoes peeled and cubed
- 2 Tablespoons olive oil
- 1 Tablespoon garlic minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 Tablespoon fresh parsley chopped
- 1/4 cup grated Parmesan cheese
Preheat oven to 400 degrees F. Spray a large baking sheet with nonstick cooking spray; set aside.
Spread cut sweet potatoes in an even layer on prepared pan.
In a small bowl, mix together olive oil, garlic, salt and pepper until combined then pour over sweet potatoes and toss to coat.
Bake for 30 minutes, stirring or flipping halfway through.
Remove from oven and top with fresh parsley and grated parmesan and return to the oven and cook on high broil for 1-2 more minutes to melt cheese.
