Preheat oven to 325 degrees F. Spray a 9-inch pie pan with nonstick cooking spray; set aside.
In a bowl, or stand mixer, combine all crust ingredients until a thick dough forms. Roll out dough to a circle approximately 11 inches in diameter (you want it larger than the pie pan to form a crust on the edge).
Lightly press the dough into the bottom and up the edges of the pie pan and crimp the edges with your fingers to form a crust; set aside.
In a large mixing bowl or stand mixer, combine honey, coconut oil, eggs, pumpkin and vanilla extract. Add protein powder, Kodiak Cakes, baking soda and salt and mix until combined. Fold in chocolate chips then spread in prepared pie crust.
Bake for 35-40 minutes or until lightly golden brown on top. Let cool then cut into slices to serve.
