Preheat oven to 350 degrees F. Spray an 8x8- inch baking dish with nonstick cooking spray; set aside.
In a large mixing bowl, combine diced apples, melted butter, maple syrup, vanilla extract, protein powder, cinnamon and nutmeg. Spread mixture in an even layer in the bottom of prepared pan.
Combine all topping ingredients and sprinkle on top.
Cover pan with aluminum foil and bake for 20 minutes. Remove foil and bake an additional 20 minutes, or until golden brown on top. Remove from oven and let cool for 5 minutes before serving.
