Line a large baking sheet with parchment paper or spray with nonstick cooking spray; set aside.
Add broccoli and cauliflower to a large bowl or resealable gallon-sized bag. Drizzle olive oil on top and toss to coat. Add parmesan cheese, garlic salt, salt and pepper and toss until evenly coated.
Spread broccoli and cauliflower in an even layer on prepared pan. Bake for 20-25 minutes or until vegetables are tender.
