Taco Soup

Ingredients

  • 1 pound lean ground beef
  • 1 yellow onion diced
  • 2 teaspoons garlic minced
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can corn drained
  • 1 (4.5 ounce) can diced green chilies
  • 1 (28 ounce) can crushed tomatoes
  • 2 cups low-sodium chicken broth
  • 1 Tablespoon chili powder
  • 1 Tablespoon cumin
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon dried oregano

Instructions

  • Add beef to a large pot over medium-high heat. Cook, breaking up meat, until browned and cooked through.
  • Add onion and garlic and sauté for an additional 1-2 minutes.
  • Add remaining ingredients and mix until combined. Bring to a boil, then reduce heat to low and let simmer for 30 minutes.
  • Serve with desired toppings (not included in nutrition information).
