Preheat oven to 375 degrees F. Spray a muffin tin with nonstick cooking spray; set aside.
In a mixing bowl or stand mixer, combine self rising flour, protein powder and Greek yogurt until a thick dough forms (you may need to add more flour if it is too sticky to handle). Roll dough out onto a lightly floured surface into a large rectangle (approximately 10’”x14”).
Combine filling ingredients and spread in an even layer over dough.
Roll dough into a log shape and cut into 12 equal pieces.
Place each cinnamon roll in a muffin cup.
Bake for 15 minutes, or until the edges are lightly golden brown.
Whisk together icing ingredients and spread on top of warm cinnamon rolls.
