Protein Lemon Ricotta Pancakes
- 2 cups Kodiak Cakes Buttermilk Power Cakes Mix
- 2 scoops whey vanilla protein powder
- 1 Tablespoon Truvia Cane Sugar Blend
- 1 cup low-fat 1% milk
- 3 eggs
- 1/2 cup part-skim ricotta cheese
- 1/4 cup lemon juice
- 1 Tablespoon lemon zest
- Preheat a grilled or skillet to medium heat and spray with nonstick cooking spray.
- Whisk together all ingredients in a large mixing bowl.
- Pour batter 1/4 cup at a time onto griddle or skillet and cook until bubbles appear in the center of the pancake, then flip and cook until both sides are golden brown.
