Ingredients

Dough:

  • 1 3/4 cup self rising flour
  • 1 scoop whey snickerdoodle or similar protein powder
  • 1 cup nonfat plain Greek yogurt

Filling:

  • 1/4 cup I Can’t Believe It’s Not Butter Light
  • 1/3 cup brown sugar
  • 2 teaspoons cinnamon

Icing:

  • 1/4 cup I Can’t Believe It’s Not Butter Light
  • 1 ounce 1/3 less-fat cream cheese
  • 1/2 teaspoon vanilla extract
  • Dash of salt
  • 3/4 cup Swerve Confectioner Sweetener

Instructions

  • Preheat oven to 375 degrees F. Spray a muffin tin with nonstick cooking spray; set aside.
  • In a mixing bowl or stand mixer, combine self rising flour, protein powder and Greek yogurt until a thick dough forms (you may need to add more flour if it is too sticky to handle). Roll dough out onto a lightly floured surface into a large rectangle (approximately 10’”x14”).
  • Combine filling ingredients and spread in an even layer over dough.
  • Roll dough into a log shape and cut into 12 equal pieces.
  • Place each cinnamon roll in a muffin cup.
  • Bake for 15 minutes, or until the edges are lightly golden brown.
  • Whisk together icing ingredients and spread on top of warm cinnamon rolls.
