Cajun Baked Sweet Potato Fries

Ingredients
- 2 pounds sweet potatoes
- 2 Tablespoons olive oil
- 2 teaspoons sea salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- 1 Tablespoon smoked paprika
- 1 Tablespoon sugar
Instructions
- Preheat oven to 425 degrees F. Spray a large baking sheet (or two half sheets) with nonstick cooking spray; set aside.
- Peel and slice sweet potatoes into long, thin strips, about 1⁄4-inch wide. Place cut sweet potatoes in a resealable gallon-sized bag and pour olive oil on top. Seal bag and shake until potatoes are evenly coated.
- Add remaining ingredients to the bag, seal and shake to evenly coat fries. Spread fries in an even layer on prepared baking pan(s), being sure not to overlap fries.
- Bake for 35 minutes then turn oven to high broil and cook for an additional 1-2 minutes, or until fries are crisp and golden brown.
