Parmesan Herb Roasted Sweet Potates

  • 2 pounds sweet potatoes peeled and cubed
  • 2 Tablespoons olive oil
  • 1 Tablespoon garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 Tablespoon fresh parsley chopped
  • 1/4 cup grated Parmesan cheese


  • Preheat oven to 400 degrees F. Spray a large baking sheet with nonstick cooking spray; set aside.
  • Spread cut sweet potatoes in an even layer on prepared pan.
  • In a small bowl, mix together olive oil, garlic, salt and pepper until combined then pour over sweet potatoes and toss to coat.
  • Bake for 30 minutes, stirring or flipping halfway through.
  • Remove from oven and top with fresh parsley and grated parmesan and return to the oven and cook on high broil for 1-2 more minutes to melt cheese.
