Mongolian Meatballs

Ingredients

Meatballs:

  • 1 1/2 pounds 93% lean ground beef
  • 1/2 cup yellow onion diced
  • 1/2 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 2 Tablespoons low-sodium soy sauce

Sauce:

  • 1/2 cup water
  • 1/2 cup brown sugar
  • 1/2 cup low-sodium soy sauce
  • 2 Tablespoons oyster sauce
  • 1 teaspoon garlic powder
  • 2 teaspoons cornstarch
  • 1/2 teaspoon sesame seeds

Instructions

  • Preheat oven to 400 degrees F. Line a large baking sheet with parchment paper; set aside.
  • In a large mixing bowl, combine ground beef, onion, breadcrumbs, garlic powder, and soy sauce until well combined.
  • Form mixture into 24 equal sized meatballs (approx. 34 grams each). Place meatballs on prepared pan and spray the top with cooking spray then bake for 15-18 minutes or until cooked through.
  • Meanwhile, prepare the sauce by whisking together water, brown sugar, oyster sauce, garlic powder, and cornstarch in a saucepan over medium-high heat. Cook, stirring constantly, for 5 minutes or until thickened.
  • Toss cooked meatballs in sauce and garnish with sesame seeds before serving.

    This is going to be my new quick and delicious go to! Super easy to make, doesn’t take very long at all. Everyone loved it! Had it with white rice and steamed broccoli.

I wanted to eat this, but didn’t want to have to make it into meatballs, so instead I cooked the “meatball” mix in a pan until the meat was brown, and then I just added the sauce. Still weighed out each serving for 37g, but saved so much time having to bake/roll the meatballs out!
