Cowboy Caviar

Ingredients

  • 1 (15.5 ounce) can garbanzo beans drained and rinsed
  • 1 (15.25 ounce) can black beans drained and rinsed
  • 1 (15.25 ounce) can corn drained
  • 8 ounces orange or red bell pepper diced
  • 1 ounce jalapeno pepper finely diced
  • 4 ounces red onion finely diced
  • 4 ounces avocado diced
  • 1/4 cup fresh cilantro chopped
  • 2 Tablespoons lime juice
  • 3 Tablespoons apple cider vinegar
  • 1 Tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  • Mix all ingredients in a large mixing bowl until well combined.
  • Cover and refrigerate before serving.
  • If making ahead of time, don’t add avocado until right before serving.
