Chicken Tortellini Pasta Salad

Ingredients
- 1 (19 ounce) pkg. frozen cheese tortellini
- 1 pound cooked chicken diced
- 2 cups baby spinach
- 1 cup red onion diced
- 1 cup cherry tomatoes halved
- 1 cup cucumber peeled and diced
- 1 (2.25 ounce) can sliced olives drained
- 1/4 cup feta cheese crumbles
- 1/4 cup olive oil
- 1/2 cup red wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 teaspoons garlic minced
Instructions
- Cook tortellini according to package directions; rinse in cold water, drain and set aside.
- In a large mixing bowl, combine cooked tortellini, chicken spinach, onion, tomatoes, cucumber, olives and feta.
- In a separate bowl, whisk together olive oil, vinegar, salt, pepper and garlic until well combined then pour over other ingredients and toss to coat.
- Refrigerate until serving.
